In an effort to encourage us to eat our veggies (& fruits), I thought this might help us eat more good veggies. Watch out for those GMO crops like corn, soy, sugar beets & zucchini. (If you don't know what GMO is, Google it. You'll be amazed!)

Today, I'll be eating mushrooms, red bell pepper in my eggs, kale (using it like lettuce), red bell pepper, cucumber in my sandwich, sweet potato with my dinner. Lots of color on the menu today!

Another can of V-8. It says the juice is equal to two full servings of veggies, so I'm ahead of the game today.

I often eat raw carrots/celery/dip regularly, anytime.....and other veggies. Like em steamed also.

Lunch - Chinese chicken with mixed vegetables - the Web site for the restaurant lists "MUSHROOM, STRAW MUSHROOM, BROCCOLI, SNOW PEAS, GREEN ONION, GARLIC, BABY CORN, WATER CHESNUT [sic], CARROT, BOK CHOY" as ingredients.

Snack - Red grapefruit in a single-serve fruit cup.

Supper (not eaten yet, but I already have it on hand) - Diced red tomatoes, it's a pasta dish.

When I had my combined supper and bedtime snack: Peaches. (Yum-yum!)

I hope to have some veggies today, I went to the store and bought asparagus, celery, and green beans yesterday. The only problem was I ate fruit instead for some reason. Probably because I also bought a mess of fruit.
