In an effort to encourage us to eat our veggies (& fruits), I thought this might help us eat more good veggies. Watch out for those GMO crops like corn, soy, sugar beets & zucchini. (If you don't know what GMO is, Google it. You'll be amazed!)

Today, I'll be eating mushrooms, red bell pepper in my eggs, kale (using it like lettuce), red bell pepper, cucumber in my sandwich, sweet potato with my dinner. Lots of color on the menu today!

I went to The Cheesecake Factory for lunch (about 3:00 PM, went in when they weren't packed) and I had a pork chop. It was accompanied by lumpy applesauce, mashed potatoes, and spinach. I downed the whole thing with gusto. Even gnawed the meat off the bone, undoubtedly not the most gracious thing done in a restaurant.

I've got enough money on gift cards to pay for about a meal and a half at The Cheesecake Factory, a half a meal at Cracker Barrel Old Country Store, and a $4 gift card to Subway (June incentive for attempting to donate blood at Gulf Coast Regional Blood Center in Houston). That will buy me about half of a FOOTLONG.

I can buy gift cards at Kroger and get a 6% rebate on my American Express card. Although right now my Chase Freedom VISA has a 5% rebate on restaurant meals.
